The tender leaves & the base otherwise known as the heart or bottom of the bud are both edible, the tougher outside leaves and the furry choke and its surrounding leaves are not.
Why not try something different to cook at home best to google on advice how to cook if new to your kitchen.
One of those forgotten vegetables which are delicious, once prepped they can be boiled, steamed or the bottoms can be grilled or sliced & gently cooked with olive oil, garic, crushed coriander seeds & finished with fresh chopped de-seeded tomatoes & lemon juice so tasty.

So Fresh! was really impressed by the quality of this. Most of the time I buy from a supermarket and always the actual choke is soft etc, but yours was really fresh, really good.
