Slow cooking lamb shoulder allows the connective tissue to break down over time, rendering it moist, tender and full of flavour. To get the best out of the meat, it should be roasted or braised at a lower temperature over a long time.

A whole shoulder will feed up to five people and makes a perfectly tender roast dinner.

      We braised ours and was impressed with how tender it was. It fed all of us (5 in the household) with a little left over too!
