Westcombe dairy in Somerset the flag ship multi award winning hand crafted cloth bound cheddar made by using unpasteurised milk in much the same way as it was by Mrs Brickwell over 100 years ago. It is honoured with the Artisan Somerset Cheddar designation from Slow Food – one of only three cheeses to have this accolade. Winner of BEST PDO Cheese & Best Cheddar at the 2017 British Cheese Awards.
It is aged for around 11-18 months with a deep complex flavour with a mellow lactic tang & long notes of citrus, hazelnut & caramel. The texture is structured & firm, with a smooth breakdown that keeps the flavours lingering on your palate.
