It is honoured with the Artisan Somerset Cheddar designation from Slow Food – one of only three cheeses to have this accolade. Winner of BEST PDO Cheese & Best Cheddar at the 2017 British Cheese Awards.
It is aged for around 11-18 months with a deep complex flavour with a mellow lactic tang & long notes of citrus, hazelnut & caramel. The texture is structured & firm, with a smooth breakdown that keeps the flavours lingering on your palate.
